We are combining the best of Calgary’s food scene with local fashion to celebrate a perfect alignment of our brands,” says Eraj Jayawickreme, Fairmont Palliser Executive Chef and Food and Beverage Manager.
Jayawickreme better known as “E” realized his love for cooking at the tender age of 10. He was brought up by his parents to value both food and hard work. Although he was enthralled by the TV cooking shows of the early 90’s, he wanted to create these dishes himself. Wary of a youngster burning down the kitchen, Eraj’s parents allowed him to cook but only on an electric skillet. His love for food grew stronger as he got older, and at thirteen years old he told his parents that he would was going to be a chef. Eraj went on to open and run his own restaurant, with a unique interpretation of what today’s “modern” kitchen is. Focusing on organization, discipline and team work, Eraj and his team utilize ingredients from local producers, farmers and suppliers to create delicious dishes infused with classic Canadian flavours.
Alongside Eraj is Dave Bohati, Executive Chef of Hawthorn Dining Room & Bar. Dave has over 12 years of experience in the restaurant and hospitality industry. His career began at the Opus Hotel in Vancouver, but in 2009 Dave relocated to Calgary and began working as Chef de Partie at the iconic Rush restaurant. Dave was quickly promoted to Sous Chef, followed by Executive Chef. After several years in Calgary, he relocated to Montreal where he wrote the Omakase tasting menu for Park restaurant. In 2017, Dave shifted gears yet again and began working as Corporate Executive Chef at Murrieta’s where he oversaw operations in both Calgary and Canmore before becoming Executive Chef of the Hawthorn kitchen. Dave was awarded Calgary’s Gold Medal Plate in 2014 and 2018, and recently named an ambassador for Canada Beef.
"I'm excited to offer a new perspective on Hawthorn's sociables menu," chef Dave Bohati told Daniel Ball of Eat North during an interview last month, "I can't wait to utilize some of the best local farmers and suppliers within the Calgary area to create a new fall menu that truly reflects the spirit of Calgary.”
